Scotch Brains are a cross between a scotch bonnet and a superhot yellow brain strain. We took these beautiful yellow ufo shaped peppers fermented them for at least two weeks and then combined them with vinegar and garlic to make a hot sauce mash. The mash is mixed with the salt wet to fully infuse the flavor and then freeze dried to preserve the probiotic nature of the ferment and the flavor profile. Result is a hot but manageable heat with a fruity Louisiana style hot sauce flavor perfect for spicing up your favorite dishes.
